Yes, I concure on the two smaller ropes. Majority of canyons will have a mix of smaller abseils, so even if you have an abseil with a big drop you don't want to use that one big rope for a small drop, too messy. Most common length would be 30m. 60m is handy for big abseils like Empress. Rarely do you need more than 60m, as 30m is pretty big canyon abseil. I once compiled all canyons and IIRC the average drop was 12m or so, hence 30m being a bit of a sweet spot. But most people end up wiht a bunch of lengths...

As T2 said, if you are going with a commercial group they will know exactly what they are doing as they do this canyon every day. You can see and judge the water level from the walk in, so they will know what to look for.

Assuming it can be spread in water (pools are closed, so?), canyons usually have constant water flows from upstream, so should be safe unless an infected person/party is behind you. So pays to go last in the group? :D

The insurance part is always tricky, anyone can choose to sue you at any time for any thing. But the laws and legal precedent were certainly changed in favor of trip organisers who take "reasonable precautions".
